We all love Grape Drinks. There’s something about Concord grapes that takes us back to our juice box days. For this cocktail we wanted to lighten up the classic flavor from our childhoods with an herbal element and fresh tarragon was the natural fit. We start with a high quality vodka, our favorite is California Courage by Seven Stills in San Francisco and we infuse it with fresh grapes and tarragon.

Batch:

1 Liter Seven Stills California Courage Vodka

1 Quart Fresh Concord Grapes

15 grams Fresh Tarragon

Seal all ingredients in a vacuum bag and submerge in 62 degree water, holding the temperature with a circulator wand. Keep at a steady temperature for 2 hours. Place the sealed bag and contents in an ice bath and strain after fully cooling the liquid. Keep your batched liquor refrigerated for up to 3 weeks or at room temperature for 4 days.

2 oz. Grape & Tarragon Vodka

1 oz. Freshly Squeezed Lime Juice

1 oz. Simple Syrup

Shake all ingredients with cubed ice for 30-45 seconds.

Double strain cocktail into a chilled Collins glass and fill the glass with cubed ice to the wash line. Top off with tonic water.

Garnish with 2 Concord grapes and a sprig of mint or tarragon.
